Dutch Baby

A freshly baked Dutch Baby resting happily among flats of baby tomatoes and baby onions.....just moments before we sat down to enjoy eating it. 


WHOLE GRAIN GLUTEN FREE  -  DUTCH BABY

Heat oven to 400 degrees
Heat 10 inch cast iron skillet in oven or on stove top
Melt 1 T butter in skillet

Place ingredients in blender in order given:
   3/4 c buttermilk
   4 eggs
   1/2 t vanilla
   3/4 c fresh ground millet
   1 T sugar or evaporated cane juice
   1/2 t salt


Blend less than a minute or until well blended
Swirl melted butter around in skillet and pour excess butter into batter
Blend batter again briefly
Pour batter into hot skillet
Bake 20 minutes
Serve with berry conserve, honey, yoghurt, or ricotta cheese....or anything that sounds delicious!
